Up a mezzanine above a larger subterranean dining room, six seats face a counter that has quietly become one of Melbourne's most decorated sushi experiences. The format is omakase in its purest sense: a personalised, multi-course procession of nigiri and small courses built around whatever seasonal, ocean-fresh produce is at its peak, each piece finished by hand directly in front of you. The sushi chef leading it arrives with a pedigree drawn from the city's most exacting Japanese kitchens, and the results have held Two Hats in the Good Food Guide for a fourth consecutive year, a rare run of consistency for a room this small. Service begins sharply at 7pm, and the evening unfolds at the pace the counter sets rather than the diner's; part of the pleasure is surrendering to that rhythm. Below, a design-led cocktail bar and a broader Japanese-leaning menu handle the crowd, but the mezzanine is the destination, deliberately intimate, unhurried and precise, closer to a private tasting than a restaurant table.
