The Story

An independent sushi shop opened by operators who spent 18 years running a franchise conveyor belt restaurant. The kitchen works in the kaiten-zushi tradition, selecting fish each morning and building each piece by hand. The chefs aim for the flavours and dishes current in Japan today rather than a fixed idea of tradition. Found in The Pines Shopping Centre on Guineas Creek Road, Elanora, with takeaway available for pick up.
