The Story

Behind a warehouse frontage on Danks Street in Waterloo, this is an omakase built to feel like a discovery, the late-night room a friend of a friend mentions, found down a side street rather than advertised. Executive chef Nobuyuki Ura runs a nine-course kaiseki-style progression from an open kitchen, hand-butchering fish and pacing the meal with the quiet attentiveness the Japanese call omotenashi. The setting leans into the contrast: raw industrial bones softened by velvet booths and low light, closer in mood to a speakeasy than a traditional sushi counter. Sake arrives both straight and folded into cocktails, and the kitchen is not above a little playfulness, a Balmain bug san choi bao among the opening courses, local seafood pulled into a Japanese frame. Lunch and dinner both run through the week, with later seatings on weekends for those who want the meal to bleed into the night. What distinguishes it is tone as much as technique: a serious kaiseki sensibility delivered without stiffness, warm where omakase can be austere, and comfortable letting the evening find its own rhythm rather than marching guests through it.
