The Story
A Top End jerky maker who has spent well over a decade hand-making his own beef, buffalo and crocodile jerky from a shed about half an hour south of Darwin, using Australian meat and a personal armoury of sauces and spices. One of only a handful of crocodile-jerky producers in the country, the operation sets up at Darwin's Mindil Beach sunset markets through the dry season.
