The Story
Drasko Jankovic cooked at Noma and its sister restaurant 108 in Copenhagen, then went to Nashville with Ken Craigie, ordered triple-hot off-menu at Prince's, and came back to Perth to build the thing Perth didn't have. Fermentation runs underneath the Southern spice — beyond the pickles and the hot sauce. Separate fryer for gluten-free. Halal certified. Now at Village Green in Karawara, Tuesday to Sunday.
