A Marrickville bakery hand-making genuine New York-style bagels the slow way, through a two-day cold ferment, a kettle boil and a bake on wooden boards, chasing that chewy, malty character the shortcuts never quite reach. Started by a Brooklyn-born food writer, it also brings its bagels and schmears to the Northside Produce Market.
