The Story
Dan Hunter cooked at Mugaritz under Andoni Luis Aduriz in Spain and ran the kitchen at the Royal Mail Hotel in Dunkeld before buying Sunnybrae in the Otways hinterland in 2013 and renaming it Brae. Thirty acres of regenerative kitchen garden two kilometres from Birregurra; gardeners pull the harvest each morning for that day's service. Slow-cooked beetroot braised with abalone and whipstick wattle. Pork jowl grilled with smoked eel. Wheat croissants. Country acknowledged to the Gulidjan people. Dinner Thursday, lunch Friday to Sunday. Six guest suites by Six Degrees Architecture for diners booking the meal.
