The Story

Tucked into Loftus Lane in the Quay Quarter precinct, this twelve-seat counter channels the hushed intimacy of a back-street Osaka sushi-ya. A wooden bench wraps the open kitchen, where the chef, a sushi veteran of some twenty-five years and a decade at a celebrated Bondi seafood room, hand-selects the day's catch and shapes it before you across eighteen to twenty courses. Oysters open every sitting and seafood nigiri is the heart of the meal, the fish changing with the market rather than following a fixed menu. The pace is deliberate and the mood convivial, chefs passing sea grapes to guests as they settle and narrating each piece as it lands. Two seatings run most evenings, with weekend lunches added, and the whole thing is small enough that reservations release on the first of each month and vanish quickly. A companion bar alongside carries the Japanese theme into a serious whisky list, a natural coda to the counter. This is omakase in its purest form, with no a la carte and no distractions, just a skilled pair of hands, a dozen seats and whatever the morning's market delivered, served with warmth and an easy showman's charm across an open kitchen you sit close enough to touch.
